Ancient Chinese dishes still popular today – claypot, dumplings, Peking duck, kung pao chicken

A number of famous dishes that grace tables in China today are actually not part of the country’s culinary tradition.

For example, the chilli pepper, a staple in Sichuan cuisine in China’s southwest, was only introduced in the 1570s by foreign sailors, which then led to the creation of now-famous spicy dishes.

More than 10,000 years ago, people began using clay pots to boil food in water, which gave rise to various famous dishes throughout history, such as claypot rice and claypot chicken.

In the famous Cantonese dish of claypot rice, also known as rice casserole, the rice is pre-soaked and then cooked with a variety of toppings that flavour the rice.

The clay pot benefits allows the ingredients to heat slowly and evenly, helping to preserve the vitamins and minerals that are often lost with high-temperature cooking methods.
