On June 6, footage from a pickling pit in Hubei province emerged online, showing workers standing in vats of pickled vegetables. Some were barefoot and others were even wearing shoes, stepping directly into piles of sauerkraut as they worked. The entire batch, exposed to dirt, bacteria, sweat, and grime from shoe soles and feet, was at risk of entering the consumer market.
